When in doubt, cook.

Spending some quality time in the kitchen today....

For the last week we have been in search of
the perfect color of paint to paint our kitchen...
TWELVE samples later, we still haven't found the right one.

So today, I am giving up on paint for a while,
and making some home-made Pumpkin Bars.

INGREDIENTS

Bars:

  • 4 eggs
  • 1 2/3 cups granulated sugar
  • 1 cup vegetable oil
  • 15-ounce can pumpkin
  • 2 cups sifted all-purpose flour
  • 2 teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • 1 teaspoon salt
  • 1 teaspoon baking soda

Icing:

  • 8-ounce package cream cheese, softened
  • 1/2 cup butter or margarine, softened
  • 2 cups sifted confectioners' sugar
  • 1 teaspoon vanilla extract

DIRECTIONS

Preheat the oven to 350 degrees F.

Using an electric mixer at medium speed, combine the eggs, sugar, oil and pumpkin until light and fluffy. Stir together the flour, baking powder, cinnamon, salt and baking soda. Add the dry ingredients to the pumpkin mixture and mix at low speed until thoroughly combined and the batter is smooth. Spread the batter into a greased 13 by 10-inch baking pan. Bake for 30 minutes. Let cool completely before frosting. Cut into bars.

To make the icing: Combine the cream cheese and butter in a medium bowl with an electric mixer until smooth. Add the sugar and mix at low speed until combined. Stir in the vanilla and mix again. Spread on cooled pumpkin bars.

HUGE Summer Up-Date

We have had a fun and busy summer. I am amazed that it's already coming to an end!! Here is a quick catch-up!!

Roman FINALLY has a high-chair!! Yay! We just procrastinated getting him one for the longest time. I have no idea why. But it's been a huge life-saver. Plus, he loves sitting in it. He know that when he sit there, that means FOOD!!! He loves any "real" food that he can get his hands on.
Roman's friend, JETT, had a fun 1st birthday party. Roman had a blast seeing all the kids run around.
Sawyer was at the party too. He was in Cupcake HEAVEN!! I love this picture!! He has a frosting beard. :) What a silly boy! He calls Roman "Ro-Ro"
Um, no words necessary. Obviously Roman is blissfully happy in the bathtub. He loves being in water SOOO much. He has discovered that there is water in the toilets. {JOY}

As you can see, Roman has a perma-grin. People always ask me if he is always THAT happy. The answer is yes. I don't know how I got such a pleasant, happy, and adorable child. He just makes it impossible to be sad around him! I think Heavenly Father I knew I would need him just the way he is.
Last week, my little bro. CRAIG, got home from his mission!! {More pics of that coming soon} As a family, we headed up to Park City together to spend some quality time together. We had so much fun! Here we are at breakfast on Saturday morning...

Babies in the air...

Last week, Alisa & I threw a baby shower for Kallie. We have all been friends since 1st or 2nd grade. Kallie and I grew up around the corner from each other. She was my childhood BFF.
These girls mean so much to me. It's been so fun seeing Kallie Preggo!
I can't wait to meet baby Naomi.

I left my Heart in San Francisco...

For Father's Day this year, I got Casey tickets to go see his beloved RED SOX play the Oakland A's. So we decided we better make a trip out of it! Casey had never been to San Francisco and we haven't gone on an ALONE trip since our Honeymoon! It was much needed!

We had so much fun!! We did lots of shopping, eating, sight seeing, etc. This is Casey & I at Fisherman's Wharf. It was FREEZING the whole time {55 degrees}, and SUPER foggy. It made for a very fun and romantic setting. :)

I truly enjoyed not doing my hair all week!
It was just too humid, and wet and cold to worry about my hair!
Thank heavens for cute headbands.

For being such a HUGE city, it was very charming!
Wednesday morning we rode the train to Oakland for the big game. The weather was so awesome there. Perfect for a ball game. The game was at 12:30 in the afternoon, so it was kind of nice to just sit back and relax and watch some good ol' American baseball!

We had such a great time. It was so fun for me to see Casey so happy. He really loves baseball. It was fun to see him enjoy something so fun for him.
He works so hard for us and he really deserves to do fun stuff like this!

Sadly, the Sox lost. :( Boo. They must have not gotten the memo that we were in town. Oh well! I guess we'll have to keep going to games! We want to go to as many baseball fields that we can throughout the country. We have a LONG way to go!

We had a great time! We sure missed the little man though! He has started crawling and is just as cute as ever! I missed him so much. I would get teary-eyed when my parents would send pictures of him!! I knew he was in great hands, but this was the first time we have left him over night! It was good for us to get some quality "mommy & daddy time" though.

We thought maybe we could put him in
our suitcase and sneak him on the plane with us. :)
Ha ha... Silly Daddy!

WE LOVE HIM!

Roman is just the happiest, best baby!
He is getting so big! But is small for his age.
10th percentile for weight!!
He has so much personality.
He makes us laugh all day long!


LOVES his bath time!!

He is ALMOST crawling!
Silly kid just scoots and rolls and pulls everywhere...
He is saying "mama" and "dada" all the time.
He loves giving "high-5's"

I found him sleeping like this- in kneel position.
Maybe he fell asleep saying his prayers? ha ha

Happy 9-Month Birthday, Mr. Romes!

*Still no crawling, but rolling around everywhere

*Had his first trip to the E.R. a few weeks ago. {CROUP}
*Still makes me cry about once a week for being so stinkin' cute!
